HERE'S OUR BEST EVER STAR PASTA SOUP RECIPE!
INGREDIENTS:
- 10.5 cups (2 ½ liters) of your choice of unsalted veggie broth, bone broth, chicken stock, or water
- 1 onion, diced
- 2 celery sticks, diced
- 3 carrots, diced
- 4 garlic cloves, diced
- Salt to taste (start with ½ tablespoon and adjust as needed)
- 1 cup of pastina (or any small pasta shape your kids fancy – think orzo, little dinosaurs, or tiny macaroni)
- Parmesan cheese
METHOD:
- Saute your diced onion, celery, carrots, and garlic in a large pot with some olive oil.
- Add your choice of stock (veggie, bone, chicken, or water), and throw in your parmesan rind for extra flavour (optional).
- Bring to a boil, then simmer partially covered for 45 minutes until the veggies are tender.
- Sieve out the cooked veggies with a slotted spoon and place in a blender with a cup of the broth until smooth. Remove and discard the parmesan rind if used.
- Return blended mixture to the pot and stir.
- Add your cup of pasta, and continue cooking until al dente.
- Serve soup with a sprinkle with grated parm and ENJOY!
